How to prepare greens.... like kale....
Kale is a "power food," meaning that it's one of the most nutritious foods you can eat. We know several of you who already love kale (and collards & chard), but for those of you who are new to kale, be advised that it's an amazing food. It might be an acquired taste, since it can be full of mustard-family flavors that can be strong this time of year, or bitter. But, the nutritional quality is more than worth 'acquiring' a taste for.
(The best season for kale is late fall, when the frosty nights sweeten up the leaves, but we love having early kale, too.)
It's very easy to prepare. Here's a recipe to get you started (can also be used for Braising Mix, including chard & collards):
